Hearty and filling Beef - Barley soup

3/4 to 1 -lb beef sirloin1/2 cup diced onions1/2 cup diced carrots1/2 diced celery1 -15oz can diced tomatoes3/4 cup pearl barley2 tbsp olive oil1 tbsp balsamic vinegar2 bay leaves2 tsp dried oregano1 knorr beef boullion1 tbsp chopped garlic
sautee onions, celery, carrots in olive oil. Add garlic and beef at the same time, sautee until beef is just lightly browned. Add tomatoes, 3 cups of the water, bay leaves, oregano, vinegar and barley. Stir about every 10 minutes so barley doesn't stick or burn to the pan. Add small amounts of remaining water as it reduces. Serve!
