Marshmallows with Great Lakes Gelatin

1/2 cup filtered water3 T non-hydrolyzed gelatin2 cups sugar1/2 cup filtered water1/2 T vanilla
1. Pour water in bowl and sprinkle gelatin over. Let sit for 30 minutes.
2. Gently boil sugar and water until liquid turns clear (242*F degrees with candy thermometer).
3. Blend sugar, vanilla and gelatin in mixer for 10 minutes until turns to marshmallow consistency.
4. Put mixture in 8x12-inch glass pan. Cover and cut in sections after 12 hours.
Perfect along with some OJ with added Great Lakes gelatin for taking along on a walk, hike or run, or long drive to help maintain blood sugar levels in between meals.
