Tilapia with Almonds and Cherries

1 T Almonds, toasted4 (4 oz) Tilapia fillets1 small onion1 tsp thyme1 oz. of dry white wine or vermouth1/2 c. frozen sweet cherries1/3 c. chicken brothSalt & Pepper to taste
Toast the almonds until fragrant and slightly browned. Salt and pepper the tilapia.
Heat the oil in a pan. Add tilapia. Cook until firm and browned. Flip over and do the other side. Remove from pan. Add onion and saute until transluscent. Add the wine. Wait about 2 min then add thyme and cherries. Cook for about 30 sec. and then add the broth. Simmer until reduced about a third. Spoon over tilapia and sprinkle with almonds.
Serving Size: Makes 4 (4 oz) fillets with 1/3 c. of Sauce
