TexMex Chicken "Salad" Tacos

2 grilled boneless, skinless chicken breasts12 baby carrots (any carrots will do, this is what I had on hand)1 cup Fat Free Refried Beans1/2 cup salsa (or to taste)3 tbsp Sour Cream (can certainly used light/fat free)Seasoning to taste (salt, pepper, chili powder, and cumin are my favorites for this)13 Soft Taco Shells1/2 cup Reduced Fat Shredded Cheese of choiceCooking Spray
In a food processor, combine chicken, carrots, refried beans, salsa, sour cream, and seasoning. Process until desired texture (my daughter wanted it super smooth, so that's what we did)
Spoon a heaping tablespoon of the mixture into each tortilla, sprinkle on a pinch of cheese, and "squish" gently until it looks like a taco. Spray a pan or griddle with cooking spray and brown tacos on both sides.
Can serve with salsa or fat free sour cream if desired. My husband and I had 3 each, a light 411 calories for dinner, and my picky daughter willingly ate refried beans AND carrots! Double win. :-)
