Banana Loaf, Gluten Free2/3 cup Celixmix Flax Bread Mix1/3 cup amaranth flour1/3 cup buckwheat flour2/3 cup tapioca flour1 tbsp. xanthan gum (guar gum)2 tbsp. baking powder1/2 tsp. salt1/2 cup brown sugar (packed)3 large eggs1/3 cup olive oil2 medium bananas mashed1 1/3 cup Rice Dream Milk Original
Grease 2 standard loaf tins with cocunut oil. Set aside.
Mix all dry ingredients together in a bowl. Set aside.
In a large bowl, add eggs, olive oil, Rice Dream Milk. Whisk until the eggs are frothy. Add brown sugar, stir again.
In small amounts add dry ingredients. Continue mixing until all dry ingredients are added.
Divide mixture in half. Pour into loaf tins.
Bake at 350 degree oven for 60 minutes. Insert toothpick to check if loaf is cooked. If toothpick comes out clean, take loaves out of oven. Cool in loaf tin.
If using a convection oven bake at 350 degrees for 40 minutes.
Serving Size: makes 24 1/2 inch pieces.
