Mollies Scalloped Potatoes

Ingredients
2 Cups Shredded Baked Potato1 Cup Fat Free Half and Half3/4 Cup 2% Shredded Cheese1/4 Cup Scallions (green onions) chopped1/2 tsp salt1/4 tsp pepper
Directions
Shred 1 leftover Lg Baked Potato (2 cups)
chop green onion
add potato, onion, fat free half and half and 1/2 cup of the cheese to a medium bowl and mix throughly
divide into 4 ramekins 1/2 cup each top with remaining cheese
Bake in 350 degree oven for 35-40 minutes
