Creamy Yam Soup

1 yam, washed and cubed with skin (about 3 cups)3 tbsp butter/margarine3 tbsp chopped onion2.5 cups low-sodium chicken or vegetable broth (fat free, if you like)1/2 cup milk3 tbsp brown sugar
Heat butter in pot, then saute onions until translucent, a few minutes. Add broth, and bring to a boil. Add the yam, and simmer for 20 minutes, until fork tender. Mash yams in pot until smooth, then bring back to a boil. Remove from heat, and stir in milk and brown sugar until blended.
Serving Size: Makes 6 servings.
