Whole Wheat Spaghetti Salad

Ingredients
2 cups cooked whole wheat spaghetti, rinsed and cold1/2 red onion, finely diced1/2 seedless cucumber, finely diced3 Roma tomatoes, finely chopped1/3 cup red pepper, finely diced1/3 cup yellow pepper, finely diced1/3 cup orange pepper, finely diced2 cloves garlic, minced or grated1/4 cup olive oil4 teaspoons balsamic vinegar
Directions
Combine olive oil, balsamic vinegar and garlic in medium bowl. Blend well. Add tomato, red onion, cucumber, and peppers. Let sit on counter for 15-20 minutes. Stir and add spaghetti. Serve with grilled chicken, salmon, or lean steak.

Salad is best served at room temperature. This allows the olive oil to blend with the balsamic. you may also want to add a pinch of salt to each serving.
