Moroccan Honey and lemon chicken

- 4 skinless and boneless chicken breasts- 3 tablespoon of honey- 2 cloves of garlic minced- 4 italian tomatoes diced- 1/2 teaspoon of ground cinnamon- 2 tablespoon of lemon juice
1. heat 1 talbespoon of honey in a non-stick frying pan
2. add the chicken and garlic and sauté for about 1 minute on each side over medium heat until caramelised, but watch so the honey doesn't burn
3.stir the tomatoes in the pan and add the remaining honey and the lemon juice
4. bring to a simmer and cook uncovered for about 15 minutes.
5. take the chicken out and turn the pan on med-high. let the tomatoes cook for another 3 minutes to slightly thicken.
Serving Size: makes 4 chicken breasts
