5-Vegetable Bean Stew

1 tbsp olive oil1 onion, chopped2 cloves garlic, pressed1 1/2 tsp curry1 1/2 tsp cuminsalt1 can diced tomatoes2 cups water with 2 chicken buillion cubes1 can chickpeas, drained3 carrots, cut into chunks1 cup water1 large zuccchini cut into chunks1/4 cup chopped mint
In large saucepan, heat oil and fry onion until tender. Stir in spices, cook 30 seconds. Add tomatoes, broth, beans, carrots and water, bring to a boil. Reduce to medium, cover and cook 10 minutes. Stir in zucchini, cover and cook 10-15 minutes longer. Remove from heat, stir in mint.
