Enchilada Casserole

Ingredients
1.5 C Cottage cheese (low fat)1 Can black beans, rinsed and drained4 green onions1 4 oz can green chilis1 can enchilada sauce (red or green)1 C cheddar cheese12 corn tortillas
Directions
Place the cottage cheese in a blender or food processor and process until smooth. Mix with the black beans, onions, and green chilis.

Put a little of the enchilada sauce in the bottom of a baking dish. Lay 4 tortillas on the bottom, the top with 1/2 the bean/cheese mixture, than repeat. Finish with a layer of tortillas, pour the sauce over and sprinkle with cheese. Bake at 375 for 30-40 minutes.
