Chicken Sausage with Peppers

1 Tbls Olive Oil5 chicken sausage links, sliced diagonally, 1/3" thick1 large onion, sliced3 red bell peppers, sliced1 12-oz bottle of beer3 oz tomato paste4 cloves garlic, minced1 Tbls fresh thyme1 Tbls chopped cilantro1 Tbls hot sauce1 16-ounce bag of frozen greens salt and pepper to taste
In a large saucepan, heat oil over medium-high heat. Add sausage and cook until browned, stirring occasionally.
Remove sausage from pan. Add onion and peppers to pan and saute until starting to caramelize, stirring only occasionally.
Reduce heat to medium-low. Stir in remaining ingredients and simmer for 30-45 minutes until reduced to a thick sauce and vegetables are soft.
Stir in sausage and greens and heat through. Salt and pepper as necessary.
Serve over penne or with rice.
