Semi Homemade Chicken Soup

Two 49 oz containers chicken broth5 medium carrots, sliced into rounds4 large celery stalks, chopped1-2 large onions, chopped1 store-bought rotisserie chicken, meat shredded, skin removed & set aside.1/2 cup dry sherry1/2 bunch parsley, chopped finely
In a large stockpot, heat the broth.
Chop and add the vegetables
Pull meat off the rotisserie chicken and hand shred. Add to the stockpot.
Add half of the sherry and cook, covered, for 20min
Add remaining sherry and parsley and cook for 20min.
Add additional stock, as needed.
Serving Size: Makes 10 servings
