Stuffed Zuccini

5 small zuccini2 cups cooked long grain rice1 lb. lean ground beef2 cups diced celery1 cup raw onion chopped2 cloves garlic whole1 cup mozzarella cheese grated1 can plum tomatoes2 large eggs1/4 cup olive oil or less to saute vegetables and beef.
saute onion, celery, garlic, then add ground beef, remove fat.
Cook rice separately.
cut zuccini in half and scoop out the inside, bring the insides to a quick boil, cook till soft. Cool
Mix all ingredients (except canned tomatoes) together with eggs, top with mozzarella
Add your favorite spices (basil,parsley, paprika, black pepper) to the tomatoes, place stuffed zuccini in a pan, add tomatoes on top, sprinkle with parmesan
Cover and bake till shell is cooked through.
and bake till all ingredients are warmed through and cheese melted.
