Ingredients
1 cup quinoa1.5 cup chicken broth1 large tomato1 can artichoke hearts1 cup peeled, chopped cucumber1/2 cup spinach4 oz cooked salmon1/2 cup crumbled feta cheese
Directions
Cook quinoa according to package instructions, using chicken broth instead of water. In a large bowl, combine all ingredients, chopped to your liking.
