Pina Colada Mousse

Ingredients
1 carton of Fat Free Cool Whip1 cup of non-fat milk1 Pkg. Vanilla Sugar Free Instant pudding1/12 cup of Shredded Coconut (I toasted 1/4 cup but had most of it left over)1 tsp of Coconut Extract1/3 cup of diced pineapple6 marschino cherries
Directions
Toast your coconut in a frying pan, keep stirring it and when it turns brown, turn off the heat and set aside. About 3 minutes.

In a medium size bowl, add your milk and pudding mix, stir together until no more lumps appear. Fold in all but about 6 tbsp. of cool whip. Mix until well blended. Add your pineapple and coconut extract. Mix until blended.

In 6 custard cups at your pudding mixture.

Take remaining cool whip and place in a baggie, snip of the corner and pipe onto your pudding mix, to make it pretty. Top cool whip with a cherry, and top with roasted coconut.

Refrigerated until ready to eat. You can also freeze this to make an ice cream treat. Thats what I like to do!
