Winter Root & Sausage Stew

*Potato, raw, 1 large, cut into 1/2 in. cubesSweet potato, 1 large, cut into 1/2 in. cubesCarrots, raw, 2 medium, slicedParsnips, 1 medium, slicedOnions, raw, 1 medium, choppedSmoked sausage, 16 oz, slicedChicken Broth, 14.5 fl oz (low sodium)diced tomatoe italian herbs, 14.5 oz, undrainedGranulated Sugar, 2 tsp Thyme, ground, .5 tspPepper, black, .25 tspParsley, .25 cup
In 3-1/2 to 4 qt crockpot, combine all ingredients except parsley; mix well. Cover, cook on low setting for 7-9 hrs. Just before serving, stir in parsley.
To decrease sodium content, I use a lower-sodium chicken broth (Better than Bouillon chicken base) and no-salt-added diced tomatoes; I then add dried Italian herbs & garlic powder.
