Ingredients
Directions
~ 24 egg whites (or 3 cups of liquid egg whites in a carton!)~ 1 cup dry oats (rolled oats, old fashioned oats, plain Quaker oats, or quick oats will do)~ 8 slices 100% Natural Oven Roasted Turkey Breast ~ 1 cup fresh baby spinach~ 2 oz reduced fat feta cheese (crumbled)
The name of the game here is layering.
Prepare your baking pan by spraying an 8x8 square pan (I used a glass Pyrex dish) with Pam or any other nonstick spray, and pre-heat the oven to 350 degrees.
Pour about 1/4 - 1/3 of the egg whites (don't need to be exact here) and place one layer of turkey, spinach, and then feta at the bottom of the pan. Sprinkle about 1/4 of the oats (so, 1/4 c.), and put this mixture in the oven for 10 minutes.
Remove the pan from the oven and add another layer of egg whites, then 1/4 c. oats, then a layer of turkey, spinach, feta, then another 1/4 c. oats. Put this mixture in the oven for about 15 minutes, keeping an eye on it, and adding the next layer when this one is no longer liquidy, but not cooked all the way through.
Remove the pan from the oven, add the rest of the oats, then the rest of the egg whites, then place a layer of turkey on the top. Put it back in the oven until the top is firm, if you stick a fork in the middle it should come out clean (like a cake). The top will get a little brown.
When it's done, cut it in eight pieces. I re-heat these to take on the go by placing them in the oven at 350 on a piece of tin foil for about 15 minutes. When I'm ready to leave the house, I take it out of the oven, (sprinkle a little sea salt on top if you prefer) and wrap it up in the foil to take it to go!
If you don't have an oven available when you're ready to re-heat, stick it in the microwave for about 30 seconds in a microwave save container.
