Homemade Granola

Ingredients
quinoa flakes (1 c.), puffed millet (1 c.), puffed brown rice, crushed (1 c.),unsalted chopped walnuts (1/4 c.), unsalted chopped cashews (1.4 c.), unsalted chopped almonds (1/4 c.), unsalted chopped pecans (1/4 c.), unsalted hulled sunflower seeds (1/4 c.), unsalted pumpkin seeds (2 T.), dried unsweeted currants (1/4 c.), dried unsweeted coconut flakes (2 T.), olive oil (1/4 c.), unsweeted apple juice (1/4 c.), water (1/4 c.), brown rice syrup (1 T.), stevia (1/4 tsp.), vanilla (1 tsp.), almond extract (1/2 tsp.), cinnamon (to taste), nutmeg (to taste)
Directions
Mix all ingredients in a large bowl. Spread onto a jelly roll pan (or a baking sheet lined with tinfoil) and bake 45-55 minutes on 275 degrees.
