Cheese-Stuffed Chicken

Nonstick Cooking Spray4 oz. skinless chicken breast1 Laughing Cow light Swiss Cheese wedge1/4 cup fat free cottage cheese1/3 cup diced tomato2 tbsp. fresh rosemary (or whatever other fresh herb you enjoy)
Preheat oven (or toaster oven) to 350F. Spray a baking dish with nonstick cooking spray.
Cut chicken breast in half and set on baking dish.
In a small bowl, mash together the cheese wedge with the cottage cheese. Add chopped tomatoes and rosemary. (or whichever herb you're using). Mix well.
Stuff the cheese mixture onto one half of the chicken breast and top it with the other half of the breast.
Bake for about 30 minutes, until chicken is cooked.
