Magical Apple Sage Turkey Sausage Patties (or Meatballs)

Ingredients
1 (1.3lb) package ground 93/7 turkey1 large sweet/ sweet-tart apple (gala, golden, jona, fuji), peeled, cored, coarsely grated (approx. 10 oz)1/2 cup chopped fresh flat-leaf parsley3-1/3 Tbs* finely chopped fresh sage leaves (or about 3tsp dried sage)1-1/4 tsp kosher salt1 tsp ground black pepper1/2 tsp ground allspice1 jumbo egg (or 2 medium), lightly beatenCanola oil or cooking spray*The sage is very prominent here. If you're not a fan, reduce the amount to about 1 Tbs fresh or 1 tsp dried.
Directions
Note: If your apple is super juicy, drain excess liquid into a separate bowl so mixture is not too wet to form patties.

1. Combine all ingredients except the oil in a large bowl and mix lightly using fingertips just to even distribute everything. Avoid overmixing/mashing, which will make the patties tougher.

2. Line a tray with waxed paper. With moistened hands, shape 1/4cup portions into 3" patties (i get 6-8 patties total).

3. Spray a large skillet with oil and heat on medium until hot. Place 4 patties in the pan (they should sizzle immediately) and cook without moving them until browned, about 3 minutes. Turn over and cook until done, about 3-4 minutes more, depending on thickness of your patties. Transfer to a paper-towel lined plate and cover with foil to keep warm. Repeat with remaining patties.

Serving Size: Makes about six 3-inch (6oz) patties or twelve 3oz meatballs.
