Mixed Greens

Ingredients
2 (16ox) packages fresh greens (collard, turnips, or mustard)2 medium-size red onions, finely chopped2 tablespoons vegetable oil2 ½ cups vegetable broth¼ cup cider vinegar2 tablespoons dark brown sugar1 ½ teaspoons salt½ teaspoon dried crushed red pepper
Directions
1. Trim and discard thick stems from bottom of collard greens leaves. Thoroughly wash collard greens.

2. Saute onions in hot oil in a Dutch oven over medium–high heat 8-10 minutes or until tender.

3. Add broth and next 4 ingredients to onions in Dutch oven.

4. Gradually add collards to Dutch oven and cook, stirring occasionally, 8-10 minutes or just until wilted.

5. Reduce heat to medium and cook, stirring occasionally, 1 hour or until tender.

Serving Size: makes a big mess. 8-10 servings
