Peanut Butter Banana Flax Muffins

Ingredients
1 cups whole wheat flour1/2 cup wheat germ1/2 cup flaxmeal1/2 cup lightly packed brown sugar1 tablespoon baking powder1/4 teaspoon salt1/2 cup peanut butter2 tablespoons vegetable oil2 eggs3/4 cup milk2 ripe bananas, mashed
Directions
1 Preheat the oven to 375°F.
2 In a large bowl, mix together the flour, brown sugar, baking powder and salt.
3 In a separate bowl, beat together the peanut butter, oil, eggs, milk and bananas.
4 Stir the wet ingredients into the dry ingredients just until moistened.
5 Spoon the batter into 12 well greased muffin cups. Bake for 20 to 25 minutes, or until a toothpick inserted in the centre of a muffin comes out clean. Makes 12 muffins.

    I thought the batter seemed to runny, so I added 1 cup of old fashioned oats. I also threw in 1/2 cups dark chocolate chips. I ended up with 18 muffins and they are pretty darn good! - 8/20/14

    These were really good! I didn't have any wheat germ so I used oat bran as a substitute. They came out wonderfully. They're really healthy, but they taste sinfully good, not "diet" at all. - 4/14/12

    OMGosh this is sooooo yummy!!!! I used organic peanut butter....based on other recipes I've seen I added an extra banana and 1/4 c extra peanut butter....really yummy! - 8/12/11
