Easy Weekday Chicken Stew

Cream of mushroom soup, condensed, 1 small cancooked chicken breast, 3 cupsdiced carrot 1 cupdiced celery 1 cupdiced onion 1/2 cupchicken stock (use reduced sodium if you wish) 2 cupswater 1 cupfresh parsley 1 tbsp.*can salt and pepper to tasteolive oil, 1 tbsp
In a stew pot, heat olive oil over medium to medium low heat. Add diced vegetables (except parsley). Allow to soften and become translucent. Add cream of mushroom soup, stock, water, and diced cooked chicken meat. Bring to soft boil, cover, and simmer for 20-30 minutes. Veggies should be tender. Add fresh parsley and simmer for another 1 - 2 minutes. Serve with your favorite bread, rice, pasta, biscuit, or crackers.
