AMAZING Peanut Butter Chocolate Chip Oatmeal Cookies

Ingredients
1 cup all-purpose flour1 teaspoon baking soda¼ teaspoon salt½ cup I can't believe its not butter light ½ cup smart balance creamy peanut butter1 cup sugar substitute (I used nevella, you could use splenda)1/3 cup light brown sugar½ teaspoon vanilla extract1 egg½ cup quaker oats1 cup semisweet chocolate chips
Directions
1. Preheat oven to 350 degrees F.

2. Whisk together the flour, baking soda and salt; set aside.

3. On medium speed, cream together the butter, peanut butter, granulated sugar, brown sugar and vanilla extract, about 3 minutes. Add the egg and beat to combine. On low speed, gradually add the flour until just combined. Stir in the oats, and then the chocolate chips.

4. Use a tablespoon and drop about 1 tablespoon worth of dough onto prepared baking sheets about 2 inches apart. Bake for 10 minutes, or until the cookies are lightly golden.

    Incredible is the word! These melt-in your mouth cookies are decadent, easy to make, & dare I say addictive? I did cut the sugar to a 1/2 cup and they were still fab. They were baked on a glass pie plate. Note: be sure and let set a few minutes before taking off pan or they will crumble. - 3/8/16
