Lowfat Cranberry-Balsamic Dressing

2 cups cranberry juice3 Tbl balsamic vinegar2 Tbl extra-virgin olive oil1 Tbl minced shallot1 tsp fresh thyme1/2 garlic clove1/2 tsp salt1/2 tsp pepper
1. Simmer the cranberry juice in a small sauce pan over medium heat until slightly thickened and reduced to 2/3 cup, about 30 minutes. Transfer to a small bowl and refrigerate until cool, about 15 minutes.
2. Shake the chilled, thickened juice with remaining ingredients ina jar with a tight fitting lid until combined. The dressing can be refrigerated up to four days; bring to room temp, then shake vigorously to recombine before using. Makes 4, 2Tbl servings.
