Thai Curry Lettuce Wraps

6 inner leaves of romaine lettuce4 tablespoons fat-free cottage cheese1 tablespoon lime juice1 tablespoon natural peanut butter (no sugar!)1 teaspoon thai green curry paste1 teaspoon roasted black (or white) sesame seedsCarrot sliced into 4" matchsticks (1/2 medium carrot)Dash Basil (I used dried but fresh is better if you have it!)Dash black pepper1/2 cup alfalfa sprouts
Rinse romaine leaves and trip off 1" of bottom stem. Shake dry.
Peel carrot and chop into 4" matchsticks.
Mix cottage cheese, peanut butter, lime juice, curry paste, sesame seeds and spices.
Spoon filing into the inner groove of the romaine leaves.
Garnish with carrots matchsticks and sprouts.
Eat like tacos! Enjoy!
