Multigrain Pancakes

Ingredients
1/2 C. Oats1/4 C. Multigrain Mix (NOT pancake mix)1 1/2 C. Lowfat Buttermilk (or 1 C. Milk + 1/4 C. yogurt)1tsp. Vanilla1 T. Canola Oil1 Egg1 T. Brown Sugar1/2 C. Whole Wheat Flour1/2 C. White Flour1/2 tsp. Salt1/2 tsp. Baking Soda
Directions
Combine Oats, Mulitgrain Mix and Buttermilk and let stand 15 minutes to soften the grains.

Mix in all other ingredients.

Cook as you would normally cook pancakes.

    Tasty pancakes that cook up nice and high, hold their shape well which is good for making small pancakes. I had to add more milk as the mix was very thick. I used 8 grain cereal mix; it would be nice if the writer indicated what she meant by multigrain mix. - 1/4/09
