Chipotle Chilis in Adobo Sauce

1 2oz (56g) pkg of dried Chipotle Chili Peppers (usually 8-10 in a bag)1/2 cup Chopped Onion4 cloves of Garlic, Chopped1/4 cup Cider Vinegar1/2 cup Ketchup1/4 teaspoon Salt3 cups water
Pull the stems off the dry peppers and slit them down one side--wash hands after this process so you don't get hot stuff in your eyes by accident.
Put all ingredients in a heavy bottom pot that has a lid and simmer low for one and a half to two hours, or until the peppers are soft and the liquid has reduced to around a cup (the peppers will have swelled some).
Makes 20 2 Tablespoon servings (approx)
