Change of Heart Avocado Salad with Carrot Ginger Dressing

Ingredients
SALAD2 cups iceberg lettuce.5 cups (or 6 slices) cucumber.5 cups sliced tomatoes.5 avocado1 tsp sesame seedsDRESSING1/3 cup peeled and chopped carrot1/3 cup peeled, seeded and chopped cucumber2 tsp fresh ginger2 tsp sesame oil2 tsp rice vinegar2 tsp water1 tsp shallotsalt and pepper to taste
Directions
Mix together salad ingredients and split into 2 bowls
Place all the dressing ingredients except the oil into a blender or food processor.
Blend while adding soil
Serve dressing on side or drizzle over salad.
