Black Bean Chicken Casserole

1/2 cup Onions, raw chopped 1/2 cup Green Peppers chopped 2 cloves Garlic 1 tablespoon Canola Oil 1 can diced Tomatoes, undrained 1/2 cup Salsa 1 teaspoon ground cumin1/2 teaspoon dried oregano1/4 teaspoon pepper 1 can Black beans, drained 2 cups chopped chicken meat. 4.5* Corn Tortillas, (approx 6" dia) 3/4 cup shredded cheese
Saute onion, green pepper and garlic in oil until tender. Stir in tomatoes, salsa, cumin, oregano and pepper. Add beans and chicken; heat through.
Spread a third of the mixture on the bottom of an 8X8 pan that has been sprayed with cooking spray. Cut the tortillas in half and arrange on the bean mixture. Add another third of the bean mixture and a layer of tortillas. Put the last of the bean mixture on top and top with the shredded cheese. Cover and bake at 350 for 30 minutes. Cut into 6 servings.
