8 hash brown patties1 package Gimme Lean Sausage1 cup broccoli florets1 package baby spinach1 medium onion, chopped1 c shredded sharp cheddar7 eggs
Preheat over to 350
Place hash brown patties in 9 x 13 baking pan sprayed lightly with cooking spray - bake for about 10 minutes.
While hash brown bake, sautee onion, sausage, and broccoli in a pan lightly coated with cooking spray
Top hasbrowns with sausage and veggie mix and spinach leaves.
Beat eggs and pour on top.
Top with cheese and bake 20 - 30 minutes.
Serving Size: 6 very large servings.

WILLSHEMAKEIT
Try using plain frozen hash browns--no fat. Use pan spray or butter to grease the dish. I added mushrooms (brown with the sausage), and used spinach instead of broccoli (well drained, squeezed to expel as much water as possible). Calories high because servings are extra large 13x9 yields 8 svgs - 5/9/11

Ooops! I corrected the recipe. I used 7 eggs, but you can easily adjust depending on how "eggy" you want it.
