Ingredients
1 egg1 egg white4 oz cottage cheese (4%)1 spelt flour tortilla1/2 cup raw spinach
Directions
use non-stick pan; scramble egg, egg white, add cheese, salt & pepper to taste. Cover with raw spinach and spelt tortilla, cook on low for 1-2 min. Flip and fold.
