Cheesy Veggie Egg Bake

1 c. egg whites3 whole eggs1/2 c. low fat ricotta cheese1 medium onion diced1 red pepper diced7oz. sliced mushrooms diced1/2c. whole wheat flour1/8c. low fat shredded cheddar cheese1/8c. shredded asiago cheesesalt- to tasteblack pepper- to tastecayenne pepper- to taste
Preheat the oven to 375F
In a large mixing bowl combine onion, red pepper, diced fresh mushrooms, whole wheat flour, cheddar cheese, asiago cheese, salt, black pepper, and cayenne pepper.
In another mixing bowl combine the egg whites, whole eggs, and ricotta cheese.
Combine the egg mixture to the veggie mixture.
Coat a baking dish or souffle dish(1qt) with cooking spray and fill with the veggie/egg mixture.
Bake for 40-50 minutes or until the eggs are set.
Serving Size: makes 4 servings
