Spinach Tuna Casserole

Ingredients
5 cups uncooked egg noodles1 cup (8 oz) reduced fat sour cream1/2 cup mayo with olive oil, reduced fat2-3 tsp lemon juice2 tbsp butter1/4 cup all-purpose flour3 cups fat-free milk1/3 cup plus 2 tbsp shredded parmesan, divided1 pkg (9 oz) frozen chopped spinach, thawed and squeezed1 pkg (6 oz) reduced sodium chicken stuffing mix1/3 cup seasoned bread crumbs2 pouches (6.4 oz each) light tuna, in water
Directions
preheat oven to 350...gather all ingredients

cook noodles according to pkg directions...in a small bowl combine sour cream, mayo and lemon juice, set aside

in large pot melt butter...stir in flour until blended...gradually stir in milk...bring to a boil and cook for 2 min or until thickened...remove from heat...stir in 1/3 cup parmesan until melted...stir in sour cream mixture then add spinach, stuffing, bread crumbs and tuna...mix well

drain noodles...fold into mixture...spray 13x9" pan with cooking spray...place mixture in pan...sprinkle with remaining parmesan

cover and bake for 35 minutes...uncover and bake an additional 5-10 minutes or until lightly browned
