1.25 cup milk1/2 cup applesauce1 egg, lightly beaten1 teaspoon vanilla extract2.5 cups rolled oats1/2 cup brown sugar1 teaspoon baking powder1 cup each strawberries and peaches
Preheat the oven to 350°F. Spray a small baking dish (about 8 by 8-inches) with cooking spray and set aside.
In a mixing bowl, combine the milk, applesauce, egg, and vanilla. Whisk until smooth. In a separate bowl, combine the dry ingredients – oats, brown sugar, and baking powder.
Add the dry ingredients to the wet ingredients and stir until just moistened. Gently stir in the fruit. Pour the oatmeal mixture into the prepared baking dish. Bake for 25 minutes.
