Ingredients

1 med onion—chopped (½ lb. pearl onions if desired)4-5 cloves garlic—minced 4-5 celery stalks — sliced1 pound sweet potatoes—cubed6-7 cans of beans (I get a variety of red, white, black, etc.)1 pound pork or lamb stew meat—lightly browned in olive oil1 t. basil1 t. oregano3 bay leaves6 cups broth
Put ingredients in a crock-pot, stir, and stew all day (7-8 hours).
Stir 2-3 times throughout the day adding water as needed.
Pour into a tureen and serve with bread if desired.
