Rachel Mac's Low-Carb Crustless Mini Quiche

12 eggs (organic is best)1/2 lb (raw) bacon, chopped into small pieces1 10-oz package frozen spinach, defrosted, drained, and dry4 oz cheddar cheese, grated4 Tbsp shredded parmesan2 oz half-and-half cream1/2 large (or 1 small) onion2 Tbsp butter1 c. mushroomsCayenne and black pepper to taste
Sautee chopped onions in butter until translucent. Add mushrooms, cook. Then, add defrosted, rinsed, and dried (squeeze out the water in clumps) spinach.
In a separate pan, cook bacon. Drain and set on a paper towel. Beat eggs and cream, then add cooked spinach/onion/mushroom mixture and cooked bacon. Pour into muffin tins, adding grated cheddar to each one, and stir each muffin tin to mix up all ingredients. Sprinkle parmesan on top and a little ground pepper, to taste. Cook in 350* oven for 15 minutes, until cooked through.
Serving Size: Makes 12 muffin-sized servings (2 muffins per serving)
