Hearty Vegetable Bean Soup

Ingredients
1 tbsp olive oil1 onion diced3 to 5 Carrots diced3 cloves garlic diced2 large stalks celery diced2 zucchini or summer squash diced into cubes3 to 4 white or red potatoes peeled and diced into cubes1 tsp dried oregano4 sprigs fresh thyme or 1 tsp dried5 leaves of fresh basilsalt and pepper to taste1 quart of chicken broth or veg broth (low sodium) 1 can (15 oz) chopped tomatoes1 can cannellini beans drained and rinsedLarge bunch of kale or fresh spinach
Directions
saute onions, garlic, celery and carrots in olive oil. When softened, add squash, and potatoes. Allow to cook 10 min. Add in broth, herbs, canned tomatoes. Bring to a boil. Add greens. Simmer 15 min until all vegs are softened. Serve with grated cheese. Can add pasta or meat. Can substitute other vegetables or greens.
