Quinoa with Chickpeas & Tomatoes

Ingredients
• ½ cup quinoa• 1/8 tsp salt• ¾ cup water + 2 tbsp• 1 cup chickpeas• ½ cup mushrooms, chopped• ½ tomato, chopped• 1 clove garlic, minced• 1 ½ tbsp lime juice• 2 tsp olive oil• ½ tsp cumin• Pinch of salt & pepper• 1 tbsp chopped fresh parsley
Directions
Place the quinoa in a fine mesh strainer and rince until the water no longer foams. Bring the quinoa, salt and water to a boil in a saucepan. Reduce to medium-low heat, cover, and simmer until the quinoa is tender. About 20 – 25 minutes.

Once the quinoa is finished cooking, stir in the chickpeas, tomato, mushrooms, garlic, lime juice and olive oil. Season with cumin, salt & pepper and sprinkle with fresh parsley.
