Rhubarb Upsidedown Cake

Ingredients
2.25 cups diced Rhubarb1/3 cup Maple SyrupCake:1/4 cup butter1/2 cup sugar1 tsp vanilla extract1 egg1 cup flour1/3 cup milk
Directions
In a 8x8 pan, mix rhubarb and maple syrup.

In a bowl, cream together butter and sugar. Add vanilla extract and egg. Add flour and milk to create a thick batter.

Pour batter over rhubarb mixture in pan. Spread evenly.

Cook at 350F for 40 minutes

Serving Size: Cut pan into 9 pieces
