Lizzy Turkey Spinach Mushroom Meatloaf Roll

1 1/2 lbs. ground turkey3/4 cup seasoned bread crumbs1 egg large1 tsp. salt1/4 tsp pepperTopping4 oz tomato sauce1/2 cup shredded seriously sharp cheddar cheeseFilling10 oz package baby spinach1 1/2 cup shredded seriously sharp cheddar cheese1 Tbsp Italian seasoning2 clove garlic put through press1 med/large vedalia onion4 oz sliced baby portabella mushrooms
Heat oven to 375
In a bowl mash turkey, crumbs, egg, salt, and pepper
On wax paper flatten in rectangle about 1/2 inch thick
Saute mushroom, garlic, and onion till tender add spinach and wilt
Let cool slightly
Spread spinach mixture over flattened turkey
Sprinkle evenly with 1 1/2 cup shredded cheddar
Sprinkle evenly with Italian seasoning
Carefully roll and put in bread pan
Bake at 375 for 55 minutes
Remove from oven and spread tomato sauce and 1/2 cup shredded cheddar on top and return to oven for 5 minutes
Let cool 5-10 minutes
Slice and enjoy
Serving Size: 10 one inch slices approx. 4 oz.
