3 cups whole wheat bowtie pasta4 cups broccoli, chopped bite size1 12oz can water-packed artichoke hearts, drained & chopped1 red or yellow bell pepper, diced1 1/2 cup cooked Cannellini beans (approx 1 can, drained & rinsed)2 tomatoes, seeds removed, diced1/2 c sliced black olives2 T. fresh basil, chopped1 1/2 cups fat free Italian salad dressingsalt & pepper to taste
1. Cook the pasta according to directions, Drain & cool.
2. Lightly steam the broccoli, until just tender
3. Toss together pasta, broccoli, and everything else. season to taste with salt & pepper
4. allow to marinate for 1-2 hrs before serving, and toss again.
Serving Size: approx 24 1 cup servings
