Gluten Free Banana Pecan Muffins

Ingredients
egg whites or egg beaters to equal 3 whole eggs3 medium ripe bananas 3 prunes - pitted1 packet Stevia1/4 cup coconut flour1/4 teaspoon salt1/2 teaspoon baking soda1/2 cup pecans - toasted and chopped
Directions
1. Place eggs, oil, bananas, prunes and stevia in blender; blend on medium until combined.
2. add coconut flour salt and baking soda and blend until smooth.
3. Fold in pecans
4. Scoop 1/4 cup batter into lined muffin tins
5. bake at 350* for 20-25 minutes
6. Cool and serve.
