GastriKate's Apricot Coffee Cake

Ingredients
1-1/2 c. white whole wheat flour1/2 c. sugar2 tsp. baking powder1 can apricot halves in pear juice1/4 c. lucerne Best of the Egg2 tbsp. olive oilPam
Directions
Drain and blend liquid from can of apricots with sugar, Best of Egg, and oil in one bowl.
Mix all other dry ingredients in another and then combine the two.
Pour into 9" square pan sprayed with Pam.
Bake for 30 minutes at 375 degrees.
