Ingredients
4 cups macaroni cooked1 cup frozen corn1 -19 oz.can stewed tomatoes1 medium onion chopped2 oz cheddar cheese1 oz mozerella cheese2 tbsp butterSalt and Pepper to taste
Directions
Combine all ingredients in a casserole dish. Bake in 350 degree oven for 30 minutes. Makes 8 3/4 cup servings

    This reminds me of the mac and cheese my mother-in-law used to make and had forgotten about. I made a few changes. I added ground cumin - 1 teas and 8 ounces of ham. Add 51 calories, 3 g fat, 16 mg cholesterol 268 mg sodium and .9 g carb. to totals. Make a very filling meal with a salad on the side - 12/13/10
