Salmon Quinoa Stew

1 large onion, chopped4 cloves garlic, minced1 T olive oil2 c chicken broth1 c dry quinoa1 lb skinless boneless wild sockeye salmon, chopped into 1" chunks1 15-ounce can diced tomato (not drained)2 c frozen spinach1 lemon, juiced and zest
In a large pot, heat oil over medium heat. Saute onion and garlic until soft and translucent.
Stir in quinoa, tomatoes, spinach and broth and simmer until quinoa is cooked through, about 20 minutes.
When quinoa is cooked, stir in salmon and cook for two minutes or until salmon is cooked through. Stir in lemon juice and zest.
Serving Size: 2 cups
