Cajun Gumbo Style Soup

Ingredients
1 (20 ounce) package boneless skinless chicken breast, cut into 2 inch pieces12 ounces Healthy Choice Smoked Sausage link, cut into 1 inch pieces3 cups water1/2 cup uncooked brown rice1 cup onion, thinly chopped1 (28 ounce) can whole tomatoes, undrained, cut up1 (14 ounce) can chicken broth1 bay leaf1/2 teaspoon kosher salt1/2 teaspoon finely chopped fresh garlic1/4 teaspoon coarse ground pepper1/8 teaspoon ground red pepper2 medium (2 cups) zucchini, sliced 1/4 inch
Directions
1. Cook sausage and chicken in dutch oven over medium-high heat, stirring occasionally, until borwned. Drain off fat. Stir in all remaining ingredients except zucchini. COntuine cooking, stirring occasionally, until soup comes to a full boil.
2. Reduce heat to medium. Cook, sitrring occasionally, until rice is tender and soup is slightly thickened. About 30-35 minutes
3. Add zucchini; contuine cooking until zucchini is tender. Remove bay leaf.
