Baked Sweet Potato Chips

2 medium Sweet Potatoes, peeled and sliced into chipsJuice of one lime (or lemon)Pampered Chef Chili Lime Rub
Place sweet potato chips in a bowl with a lid. Squeeze lime juice over the chips and sprinkle with the Chili Lime Rub. Place lid on the bowl and shake the container to cover all the chips. Let the bowl sit in the refrigerator for a couple of hours, or over night. Spray a cookie sheet with cooking spray and lay the chips in a single layer. Broil in the oven until the chips start to brown. Turn the chips over and place under the broiler again until second side is browned.
