PIZZA Dough:1-1/2 tablespoons dry yeast1 cup warm water 2 tablespoons Organic Ex. Virgin Olive Oil 1 c. organic white flour2 c. organic whole wheat flour1/2 teas. sea salt (optional, I never use it)Topping:1 cup organic basil and garlic marinara sauce1 small organic eggplant - grilled or broiled with olive oil brushed on each side.1 cup grated raw organic mozzarella cheese1 cup shredded organic parmesean cheese2 tablespoons Organic Ex. Virgin Olive Oil drizzeled on top before baking
Combine Yeast and 1 cup warm water in food processor. Add 1 cup organic white flour and mix. Add 2 tablespoons olive oil plus 2 cups whole wheat flour and mix on high for about 5 min. Remove dough to bowl greased with olive oil. Let rise 1 hour or more.
Press into shape on baking sheet. Add toppings: 1 cup sauce, grilled eggplant, mozzarella and parmesean.
Bake at 450 deg. F on middle rack for 12 minutes or until cheese is just beginning to brown
Serving Size: Cut pizza into 8 pieces
